Greek Yogurt Parfait

One of my favorite snacks is a parfait, but if you've ever looked at the calories...woah! Granola is not only high in calories, but high in carbs and fat. 


For this parfait, I used:
3/4 cup Greek yogurt
 1 cup berries (I used fresh strawberries and blueberries)
 S
unflower seeds (for times when you need a little crunch)

This recipe pack in a TON of healthy fats, antioxidants, and nutrients into one pretty tasty snack. YUM!!!

Turkey Meatballs

One of the ways I discovered to make my meals healthier in college was to make easy swaps for similar ingredients. Today I made meatballs, substituting ground turkey for beef and oatmeal for bread crumbs. This not only cuts down on the fat, but also adds a whole grain to keep you fuller longer.
Then, I placed the meatballs onto a greased cookie sheet using a cookie scoop, making them the perfect size. After baking, I stuffed them into a whole grain pita, sprinkled on Parmesan cheese, and added some mixed greens with a side of berries. What a quick and easy meal with lots of flavor!

Cut out more of the things in your life you wouldn't miss (TV, late night snacking, scrolling mindlessly through FB) in exchange for positive interactions and hobbies that give you joy (church, crafting, exercise, or family time) and give you more out of life!!!

I can definitely find more time in my day for this little man!  He is my everything!

My Transformation Story


I am not one to post selfies, brag about myself, or tell the whole world much of anything about me. I am shy, and often don’t know what to say when I meet new people, or I get caught up in sharing things I know a lot about because I am afraid of what people will think of me. This often makes it difficult when meeting new people because I come off as arrogant or a “know it all.” 



Everyone has their own struggles, their own battles, or their own wars they fight within themselves. Mine was finding the acceptance to know that I am not perfect, but I AM good enough and strong enough to cast aside my own negative thoughts about myself, and begin transforming into the person that I want to be.  Over the past 8 years, I have had highs and lows, triumphs and failures, lost weight, gained weight, and lost it again…but the one thing that has stayed consistent is my attitude that I AM WORTH IT!!! Along with the change that took place on the outside grew this person that is more confident, more outgoing, and cares a lot less about the “what ifs” when it comes to putting myself out there!




This has led me into a new passion, which is helping others to achieve their health and fitness goals, and to motivate and inspire others through my positive, uplifting spirit.
